Basic Cruncy Wedges using Pyper's Produce Nadine Southland Potatoes

You can experient with other spices in these basic wedges - try curry powder, cajun powder, garlic pepper or a sprinkling of carraway or mustard seeds.

Ingredients:

  • 4 Large Pyper’s potatoes (600g)
  • 1½ - 2 teaspoons paprika
  • 2 teaspoons mustard powder
  • ¼ cup flour
  • pinch of salt (optional)
  • ½ teaspoon ground pepper
  • 2 tablesppons oil or clarified butter

Method:

  1. Preheat oven to 200°.
  2. Scrub the potatoes, do no peel, cut into wedges.
  3. Place potatoes, paprika, mustard powder, flour, salt and pepper in a plastic bag. Shake well and coat the potatoes evenly.
  4. Heat the oil in a baking dish for 2-3 minutes before adding the wedges.
  5. Bake, uncovered, at 200º C for 20-30 minutoes, or until the wedges are golden brown and crunchy. Turn once during cooking.
  6. Serve with sour cream if desired.

Mash with Panache using Pyper's Produce Nadine Southland Potatoes

Mashed potatoes are always a favourite and by adding any one of these combinations you can make them tast amazing.

Ingredients:

  • 600g Pyper’s potatoes
  • 25g Butter
  • Salt + Pepper

Method:

  1. Peel potatoes and cut into large chunks. Cook in a large saucepan of boiling salted water for 20 minutes or until very tender but not falling apart.
  2. Drain potatoes well, cover pot with clean tea towel and replace lid to steam the potatoes. (do not leave on stove). Using a potato masher, mash potatoes.
  3. Add butter to potatoes and mix in.
  4. Season with salt and pepper.

Variations

To four cooked mashed potatoes, add either;

  • 2 tablespoons sour cream
  • ¼ cup finely chopped capsicum
  • 2 tablespoons grated parmesan cheese

OR

  • ½ cup grated cheese
  • ¼ cup finely chopped onion
  • freshly ground black pepper

OR

  • ½ cup finely chopped raw mushrooms
  • 2 tablespoons sour cream

OR

  • 2 rashers of cooked bacon finely chooped
  • 2 tablespoons finely chopped parsley
